Honey as a Functional Food; Its Culinary Status

چکیده

Using functional foods which are recently a rising value in the food science arouses curiosity terms of health among people. Honey, as natural food, might play an important role increase this with large but conscious use it kitchens. Having prebiotic property its oligosaccharide components, honey has characteristic supporting probiotic Bifidobacterium and lactobacilli bacteria. In current study, culinary status was investigated depending on views professional chef trainers. For that shows different compositions, chefs point out that, because changes nectars flora collected by bees, qualitative bought from local producers could be more using sauces, milk products like yoghurt cheese, such spices ginger, turmeric, black pepper, cinnamon at room temperature without application heat treatment.
